So, food.

During spring break I decided to make the lazy man's version of How Sweet It Is' 15 Minute Mushroom Melts with Mustard Aioli (i.e. no aioli). I have included the link; she does a way better job! I also decided to make a salad with it. It's one of my favourite, a definite crowd pleaser (there's a similar one offered at The Keg). It's nice and sweet with crunch and creaminess. Everything that's terrific. Here we go!

Spinach Goat Cheese Salad
For this salad, use as much or as little as you want of the ingredients!

1 package of baby spinach
Walnut pieces
Crumbled goat cheese
Dried cranberries
Red onions, diced to very small pieces
A sweeter, berry-based dressing (I've used the Fieldberry Poppy Seed and Ravin' Raspberry from Renee's, both very good but I think I preferred the Fieldberry one)

1. Wash the spinach and cut off the stems if you want

2. Mix all ingredients in a bowl

Enjoy!
