
So while I'm still blushing over the glowing remarks made by my dear friend and cousin, Courtney, here we go with some more Christmas baking! These are lime zingers, one of my favourite cookies to make. They are nice and citrusy but the flavour isn't overpowering. Make sure you're generous with the lime juice and lime peel. I prefer using key limes, but maybe that's because that was always the only limes my family ever used. They're also cute and adorable!
Ingredients
1 cup butter, softened
1/2 cup granulated sugar
2 tsp finely shredded lime peel
1/4 cup lime juice (about two limes)
1 tsp vanilla
2 1/4 cups all-purpose flour
3/4 cup finely chopped Brazil nuts or hazelnuts (filberts)
1/2 of an 8-ounce package cream cheese, softened
1 cup sifted powdered sugar
1 tbsp lemon juice or lime juice
1 tsp vanilla
Green food colouring
Method
1. Preheat oven to 350 degree F. Beat butter with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar; beat until combined. Beat in lim peel, the 1/4 cup lime juice, and 1 tsp vanilla until combined. Beat or stir in flour. Stir in nuts.
2. On a lightly floured surface, roll each half of dough to a 1/4 inch thickness. Using 1 or 2 inch cookie cutters, cut into desired shapes. Place cutouts on an ungreased cookie sheet. Bake in preheated oven for 8 to 10 minutes or until edges are light brown. transfer to wire racks; cool.
3. For frosting, beat together cream cheese, powdered sugar, the 1 tbsp lemon or lime juice, and 1 tsp vanilla; tint with green food colouring to the desired colour. Pipe frosting designs on cookies. Allow frosting to dry. Makes 72.
